Here is how we make the kala chana pickle

  • Soak kala chana overnight and boil until tender. Drain any excess water and let it cool
  • Heat mustard oil in a pan. Add mustard seeds, fennel seeds, fenugreek seeds, turmeric powder, red chili powder, coriander powder, and asafoetida. Sauté until aromatic.
  • Mix boiled kala chana with raw mango lachha and the spice mixture, ensuring they are well coated. Add salt accordingly
  • Let the pickle cool to room temperature before transferring it to a clean, dry, and airtight container.
  • Allow the pickle to marinate for at least a day, allowing the flavors to meld and intensify.
